Pink Mini Tier

This fondant covered miniature tiered cake is made with 3 layers. The bottom layer is 4 inches in diameter and 2 inches tall. The middle layer is 3 inches in diamater, while the top tier is 2. Each of the top 2 tiers is just 1 inch in height. A cake of this size serves 2-3 people. Decorated with detailed interwoven stringwork and three tiny apple blossoms, this is a simple yet elegant way to celebrate most any special occasion.

    These little mini cakes are darling.  Are they real cakes or the ones you are going to use for your Wilton samples?

    This was one of several display samples that I created. I love stringwork, so I made it to show how even very simple stringwork can really dress up a little cake.

    I always have trouble with string work breaking..any suggestions?

    It depends on *when* it is breaking... If it is breaking while you are piping it, the problem is with your icing. You may need to change recipes or adjust your consistency. If it is breaking after it is on the cake, the problem is likely that your icing dries/crusts, and then when you pick up the cake, the board (and the cake) flexes and breaks the strings. To fix this, use a solid base for your cake, like the foil covered bases sold at cake supply shops, or make your own from several cardboards stacked together (for smaller cakes) or cut pieces of plywood (for large cakes).
