Place a generous amount of cornstarch into a bowl with a lid. Peel, core and slice apples into thick french fry shapes approx 1/4″ x 1/2.” drop the apple pieces into the cornstarch and shake to coat. Remove and shake off excess cornstarch. Place in container in freezer for 2 hours, up to 6 hours ahead of frying time.
Preheat oil to 375 in deep fryer or large pot. Mix sugar and cinnamon, set aside. Fry in small batches for approximately 3 minutes. Remove from oil and toss with cinnamon sugar. Serve warm with whipped cream or vanilla ice cream.
